Live Cooks with Meat Smoke Fire
We started this series at the beginning of lockdown. Each had a theme of #SaturdayNightTakeAway, replicating take away dishes. We’ve now dropped the theme but are still doing 3 dishes in 45 minutes (or there abouts), about twice a month.
The beauty of these Saturday live cooks is you get to interact, asking questions relevant to the cook or anything to do with the Big Green Egg or your grill.

Saturday 30th April 2022 – Nachos week
This week we cooked three different takes on nachos with:
- Pulled jackfruit on packet bought tortilla chips.
- Red onion and black beans on potato nachos.
- Pulled salsa backed chicken on deep-fried tortilla wedges.

Saturday 16th April 2022 – Easter Saturday, our 2nd anniversary of live cooks
It all started here 2 years ago with the live cook we did for Big Green Egg. 700 people watched that one live, the most we’ve ever had. However, lots of you still love to join us and we still love doing them.
This week being Easter we did:
- Chilli crusted, butterflied leg of lamb.
- Roasted veg with sumac and quinoa.
- Candied bacon chocolate brownie – who doesn’t love bacon and brownie, now put them together.
Saturday 9th April 2022 – Curry in a hurry part 2
Everyone loved the previous curry cook, so we thought we would do another from Misty Ricardo’s Curry Compendium.
We made:
- Chana Masala – we love this chickpea curry.Â
- Staff Curry
- Onion bhajisÂ
- Naan bread
Saturday 2nd April 2022 – Small plates
We wanted to do some small and quick cooks that anyone could achieve. This small snacking plates are a real winner.
We made:
- Szechuan pepper squid
- Dirty bavette and tri-tip with chimichurri
- Lamb spare ribs
Saturday 26th March 2022 – Pizza Week
Having spent a week skiing in Zermatt and more importantly, Cervinia, it seemed like a good idea to try and recreate some of the amazing pizza.Â
I thought I would try 3 different dough recipes too.
We made:
- Pizza Napolitana
- Pizza Quatro Stagioni
- A white pizza with garlic, potato, peppers, red onions and rosemary
- A garlic bread
Saturday 5th March 2022 – Mushroom kebabs, chicken lollipops and miso beef
Saturday 12th February 2022 – Lamb Souvlaki and Lamb Koftas with flatbreads and chips
This week we got a new DeliVita oven so thought we would use it to make some flatbreads. To go with them we cooked:
- Lamb neck fillet and aubergine souvlaki with red pickled onions and tzatziki, served in a flatbread pocket with chips.
- Lamb koftas with a greek salad.
Saturday 5th February 2022 – Curry in a hurry!
I was given a couple of lovely Balti Bowls for Christmas, so we had to give them a run out on the Big Green Egg.
We cooked:
Saturday 29th January 2022 – pork belly and mango
As well as cooking some pork belly with cracking, we use the pork belly in two of the following 3 recipes
- Japanese pork stir-fried rice.
- Korean pork bao buns with crackling.
- Grilled mango with mascarpone, lime and basil.
