Liz’s Bingo Wings

My great friends Simon and Liz were over having drinks. I was showing them the new rotisserie basket I bought for my LetzQ Rotisserie. Liz remarked:

‘It looks like a bingo basket.’ 

There it was, the idea for a great recipe. Instead of waiting for the right ball to come out, how about waiting for the right chicken wing to come out (or maybe the wrong one). My sneaky mind whirred and I came up with injecting a few in the batch with super hot sauce. 

What do you shout when you’ve picked the really hot one, well BINGO of course or maybe ‘Liz’s Bingo Wing’.

Ingredients

  • 1 box of chicken wings, cut at the joint
  • A bottle of really hot sauce
  • A bottle of Frank’s Wings Hot Sauce
  • Maldon Salt
  • 1 tbsp olive oil

Method

  1. Setup your Big Green Egg to cook with your rotisserie at 180°C direct.
  2. Joint your wings by cutting through the ball of the joint with a sharp knive.
  3. Decide how many of your wings are going to be Liz’s Bingo Wings.
  4. Use your meat injector to inject hot sauce into the Bingo Wings.
  5. Put all the wings, including the bingo wings into a bowl and drizzle over olive oil and sprinkle with Maldon salt.
  6. Now place all the wings into your rotisserie basket and cook for about 30 minutes until the outside of the wings have crisped up and the internal temp is above 80°C.
  7. Take the wings off the Egg, and toss with Frank’s Wings Hot Sauce in a bowl.
  8. Serve and wait to see who melts.

Note: You can serve the wings with a blue cheese dip made from Dolcelatte cheese, mayonnaise, creme fraiche, crushed garlic and some lemon juice.
