Don’t be fooled by the ProQ being so cheap, I’ve been using these for years now to make my own bacon, smoked cheeses and home cured and smoked salmon. I know of commercial charcuterie producers who use the Cold Smoke Generator too because it is so effective.
The beauty of this device is that you can use it in your Egg to smoke food without generating any heat. Therefore you’re only smoking your food, not cooking it. This is critical when smoking your own cheese, hot smoking it would melt it.
