A Parsi omelette is a spicy breakfast omelette. With added chilli, it has a little kick.
If we've not got some of the ingredients, we'll mix and match the veg to go into it.

Ingredients
  

  • 1 knob butter to fry in
  • ½ red onion use white if that's all you've got
  • 4 or 5 cherry tomatoes diced
  • ½ green chilli
  • ¼ red pepper optional
  • tbsp coriander leaves chopped
  • 2 eggs beaten
  • Salt and pepper to season

Method
 

  1. Set up your Egg for a direct cook with your stainless grid. Set the temperature to 200°C. Pop on your Tefal Ingenio non-stick pan and allow it to warm up.
  2. Drop in your butter and fry off your onions, for just 1 minute.
  3. Add in you chilli and tomatoes and follow quickly with your beaten egg.
  4. Spread it out in the pan.
  5. Cook for about 2 minutes.
  6. Sprinle over your coriander and season with salt and pepper.
  7. Have a go at flipping it, folding it in half. Either do this using the pan like a pancake toss, or use a spatula.
  8. Now cook for 3 minutes to add a little colour.
  9. Transfer to a plate, add a little more fresh coriander, and if you like things spicy, add a drizzle of sriracha sauce.
