There is nothing quite like homemade salsa. The freshness just blows away anything you can buy in a jar. This mango salsa is very quick to make and so worth the effort. The mango adds a sweetness that combines so well with the acidity of the lime and the chilli kick.
This salsa is great served on its own, but it's also a great side for dishes like jerk chicken.

Ingredients
  

  • 1 mango chopped
  • ½ red onion finely chopped
  • 6 cherry tomatoes chopped
  • 1 clove garlic finely chopped
  • A handful of fresh coriander
  • 1 tbsp olive oil
  • 1 lime juice only, add gradually to taste
  • 1 red chilli finely chopped
  • Salt and pepper to taste to taste

Method
 

  1. Place the chopped ingredients: mango, red onion, cherry tomatoes, garlic and coriander into a bowl. Give them a stir.
  2. Add the olive oil, juice of half a lime, some of the chilli and salt and pepper to taste. Have a try and add more lime and or chilli to adjust to your palette.
  3. Refrigerate until you're ready to serve.
