Corn Ribs

We look out for trends in BBQ and these seem to be the trend of early 2022 and for good reason, they’re absolutely delicious.

The cut corn bends as it cooks to resemble ribs, and eating the corn from the bent husk does feel like you are eating meat from a rib. Add a bit of rub to your ribs as you cook them, and you’ll be treated to some amazing flavours.

Ingredients

For the rub – this may be a little too much

  • 1 tsp ground coriander powder 
  • 1 tsp garlic powder
  • 1/4 tsp hot smoked paprika (or cayenne)
  • 3/4 tsp sweet smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the corn ribs

  • 3 or 4 corn on the cob
  • Olive oil to drizzle
  • 2 tsp chopped parsley
  • 1/2 red chilli, sliced to garnish

For the dip/drizzle

  • 2 tbsp sriracha
  • 4 tbsp mayonnaise

Method

The hardest part of this cook is cutting the corn on the cob into 4. Be really careful doing it. We will publish a video showing what we think is the best and safest method. 

  • Mix the dry spice ingredients in a bowl. 
  • Cut your corn into quarters, lengthways.
  • Drizzle your corn with oil and then sprinkle with some of the rub mix. 
  • Setup your Egg for direct grilling at 180°C with the stainless steel grid.
  • Cook your corn for about 15 minutes, turning frequently. You’re looking to colour the corn slightly.
  • As your corn cooks, mix your mayonnaise and sriracha.
  • Serve your corn ribs with a drizzle of the mayonnaise, and a sprinkling of the rub, chilli and parsley.
