Bang bang cauliflower

We’d recently given Bang Bang Chicken a try.  Having seen several posts looking for inspiration for vegetarian guests, we thought Bang Bang cauliflower could be a strong vegetarian option.  It proved to be a great vegetarian alternative.

Ingredients

  • 1 medium cauliflower
  • 2-3 tbsp olive oil

For the bang bang dressing

  • 2 tbsp sweet chilli sauce
  • 2 tbsp runny honey
  • 2 tbsp mayonnaise or peanut butter
  • 1 tbsp soy sauce
  • juice of a lime
  • 2 tsp gochujang red pepper paste
  • 1 tsp sesame oil

Method

  1. Setup your Egg with your rotisserrie and basket at 180°C.
  2. Cut your cauliflower into florets.
  3. Place the cauliflower into a bowl and drizzle with a little olive oil. Toss together.
  4. Put your cauliflower into your rotisserie basket and roast. Cook until the florets are tender but still have some crunch.
  5. Meanwhile make the bang bang dressing, combine all the ingredients into a large bowl and mix together thoroughly.  You’ll add the cauliflower to the dressing in the bowl.
  6. Take your rotisserie off the Egg and tip the cauliflower into your bowl containing the dressing.  Give the cauliflower a good stir to coat in the bang bang sauce.
  7. Pop the cauliflower back into the basket and put the rotisserie back on your Egg for another 5 to 10 minutes until the cauliflower is ready to eat.
  8. Take your rotisserie off the Egg and place the cauliflower back into the dressing bowl. If there’s any bang bang dressing remaining in the bowl, give the cauliflower another stir.
  9. Serve with rice or noodles, or as an appetiser or side to a dish of your choice.
