Pan fried whitebait

Whitebait is super tasty and really, really easy to cook. Andrea, who does most of our filming, has them as one of her all-time favourite dishes. 

You can just douse them in plain flour, but for this recipe, we have added a little spicy paprika and some garlic powder.

Ingredients

  • 500-800g Whitebait
  • 200g plain flour
  • 1 tsp garlic powder
  • 1 tsp spicy smoked paprika
  • 100ml rapeseed oil
  • 1 lemon, cut into wedges
  • 1 tsp Maldon salt

Method

  1. Set up your Big Green Egg for a direct cook with a cast iron skillet on the stainless steel grid at 220°C.
  2. Preheat your skillet and add the oil to warm.
  3. Pat your whitebait dry.
  4. In a bowl mix the flour, garlic powder and paprika. 
  5. In batches, toss your whitebait in the flour mix. Shake them so they have just a light coating of the flour. 
  6. Fry the whitebait in the skillet for about 4-5 minutes, turning occasionally. They should be golden brown when cooked. 
  7. Serve with some Maldon salt sprinkled over them and with a squeeze of lemon.
