Burnt Pineapple Mocktail

This is a great way to showcase the Big Green Egg and produce a showstopping mocktail.  It’s good to be able to offer the nominated driver or those who do not drink a thoughtful and inspiring alternative soft drink.

We decided that for the last 2023 live cook, whilst there would be food, we would also provide some drink inspiration.

Whilst you don’t have to fire up your Big Green Egg, if you’re already using it for a cook, why not see how you can zhuzh up your drinks too.

Ingredients

  • 1/2 lemon, chopped into small pieces
  • 1 slice pineapple, chopped into small pieces
  • 1/2 cm ginger, sliced in batons
  • 10 fresh mint leaves
  • salt and pepper to taste
  • 1 cup soda water
  • ice
  • fresh chilli or few chilli flakes, optional
  • 1 slice pineapple, to garnish

Method

  1. Set up your Big Green Egg with your LetzQ for a direct cook at 140°C.  You will need to almost shut the top and bottom vents to achieve this.
  2. Prepare your pineapple, by removing the skin and the base.
  3. Push your skewer through your pineapple from the top with the skewer vertical and the pineapple sitting upright on a chopping board. This is the safest way.  
  4. Put your spit onto the Egg’s it’s going to take about 1.5 hours for a small pineapple and about 2 hours for a large one.
  5. Mix your syrup dressing ingredients together and baste your pineapple.  You can do this a few times during the cook.
  6. Once the pineapple has cooked remove from the heat and allow to cool.  
  7. Take a glass, add the chopped lemon, the chopped pineapple, ginger and mint.  Give it a good muddle.  Optional:  add some chilli to zhuzh it up with a bit of gentle heat.
  8. Add the soda water. Give it a good stir and  add some ice.
  9. Garnish with a slice of pineapple.
