Curry on the Egg with Misty Ricardo

Misty Ricardo (AKA Richard Sayce) is the author of our favourite cookbook, Curry Compendium. The cookbook covers cooking British Indian Restaurant (BIR) style curries, the type you would get if you went to your local curry house.

We were recommended the cookbook by one of our clients and what a recommendation it was. We’ve cooked many of the dishes and haven’t been disappointed. As a result, we reached out to Richard and he will be joining us to give two very special classes on the Big Green Eggs on May 19th and 20th, 2023. Places will be limited to 6 people each day.

About Meat Smoke Fire Classes

Having worked at Big Green Egg in the UK and having cooked at Meatopia, Taste London, Pub in the Park and many more, Nic started teaching private classes. These proved so popular that we setup the Meat Smoke Fire cookery school at our home just 3 miles from the centre of Cambridge. We’ve been running them there since 2019 and the have been super popular. Helena (@mrs_meatsmokefire) helps with all the classes, making sure they are all slick and that most importantly you have fun.

Nic has been fortunate enough to cycle through India twice, once visiting Kerala, and the second time cycling through the Indian Himalayan foothills, both times enjoying the Indian street food. 

Classes are hands-on, not demonstrations, with an Egg shared between 2 people. We have several more Eggs so can always fire up more when required to make sure we can cover all topics. 

Classes start at 10 am with tea, coffee and breakfast, cooked on the Egg or the OFYR. Lunch is included, you’ll be cooking it! We offer complimentary drinks throughout the day. We’ll aim to finish up around 5:30 pm but may sometimes go beyond this with the last cook.

Class Content

We are still in the process of designing this class but be assured we will cover everything you need to know in order to make your very own curries that will astonish your friends and family.  We will cover:

  • Base gravy, spice mix and pastes.
  • Spices and their use.
  • Rice dishes.
  • Using the Egg as a tandoor.
  • Breads including techniques for making naan on the Egg.
  • Side dishes.

We have a small tandoor oven at Meat Smoke Fire so we’ll have the opportunity to use that and compare the results with those from the Big Green Egg.

As is usual with our classes, come hungry and don’t plan on needing a meal after the class, you’ll eat all day long. We’ll even try and do an Indian-style breakfast for you.
