Grace’s Dirty Loaded Fries
Grace and her Dad joined us for a kebab and loaded fries competition for our live cook on Saturday 9 August 2025. There was a lot of fun had by Grace and Tony, her Dad, on the lead up to the day, both kept their cooks under wraps until the day.
Grace loaded her fries with crispy pancetta, rosemary and cheddar cheese.
We each cooked a portion of loaded fries and a kebab:
- Grace’s Dirty loaded fries and chicken kebab
- Tony’s Greek loaded fries and Pork Souvlaki kebab
- Nic’s Japanese loaded fries and duck kofta kebab

BBQ Temperature

Ingredients
- 1 portion of Fries
- 130g pancetta
- fresh rosemary
- salt
- pinch of sumac. optional
To load
- handful of Monteray Jack or cheddar cheese, shredded or grated
- Grace’s Garlic Mayo
- Grace’s Hot Sauce
- Grace’s homemade pickled red onions
- flat leaf parsley, finely chopped
Method
- Set up your Egg for a direct cook at 180°C with the stainless steel grid and a cast iron skillet.
- Once the pan is warm, fry off the pancetta until crispy and golden brown.
- Remove the pancetta from the pan, and spoon onto a plate with kitchen roll to drain off any excess fat (this will ensure the fries are less greasy).
- Finely chop some fresh rosemary and mix with some salt (3:1).
- Placed the cooked fries in a bowl, sprinkle over some of the rosemary salt and Sumac. Toss the fries in the seasoning.
- To load, transfer your portion of seasoned fries while still piping hot to a serving dish. Sprinkle the cheese over the fries and give it a bit of time to melt.
- Top the cheesy fries with the cooked pancetta.
- Drizzle over the sauces.
- Garnish with pickled onions and chopped parsley.
