Tony's Greek Loaded Fries

Grace and her Dad joined us for a kebab and loaded fries competition for our live cook on Saturday 9 August 2025. There was a lot of fun had by Grace and Tony, her Dad, on the lead up to the day, both kept their cooks under wraps until the day.
We each cooked a portion of loaded fries and a kebab:

Ingredients
  

  • 4 portion of Fries
  • 2 blocks of Halloumi
To garnish
  • Dried Oregano
  • Salt
  • Grace's Garlic Mayo
  • Grace's Hot Sauce
  • Grace's pickled red onions

Method
 

  1. Set up your Egg for a direct cook at 180°C with the stainless steel grid and a cast iron skillet or plancha.
  2. Roughly slice the halloumi into 1 cm slices.
  3. Place the halloumi slices on to the hot flat surface. Grill until nicely golden brown.
  4. Flip and repeat on the other side. Remove the halloumi from the heat.
  5. Place your fries in a bowl and add the halloumi.
  6. Add some dried oregano and salt to season.
  7. Add a few pickled onions.
  8. To load, transfer your portion of fries from the bowl to a serving dish. Sprinkle over some more picked red onions.
  9. Drizzle over the sauces.
