Why is the Big Green Egg so good?

The Egg’s ceramic construction has the following benefits:

  • Food stays super moist as the airflow required is so much lower than in a standard BBQ.
  • As heat is retained, unlike most metal BBQs, you need to burn much less charcoal. One load of charcoal can burn up to 24 hours on the Large Big Green Egg.
  • The heavy construction holds heat and makes controlling the temperature of your BBQ very easy. There’s no standard British BBQ here with burnt sausages that are raw in the middle.

The Eight Cooking Modes

There are eight different modes of cooking on the Big Green Egg that make cooking just about anything possible:

  1. Grill – Sear steaks, burgers, and vegetables.
  2. Roast – Poultry, meats, and vegetables with even heat distribution.
  3. Pan cook – A full English breakfast or a chilli con carne.
  4. Bake – Pizza, breads and even cakes.
  5. Smoke – Hot smoked salmon,
  6. Low and Slow – Succulent pulled pork, ribs or brisket.
  7. Rotisserie – Porchetta, crispy chicken wings, or sardines.
  8. Dirty – Root vegetables, fruit or the perfect bavette.

It's simple to use

This isn’t like other charcoal grills. It takes just 15 minutes from lighting to reach 180°C and be ready to start cooking, faster than most indoor ovens.

Cleaning is a sinch, too; just rake the charcoal to knock off any ash from the previous cook, top it up, and with one natural firelighter, you’re off.

Temperature control is simple, too; adjust the top and bottom vents to get within 5°C of your target quite easily.

When you’re done, close the two vents, and the Egg goes out, saving all your charcoal for the next time you want to cook. So efficient.

Cooking over live fire

We all bought gas grills, they were just so convenient.

Cooking over lumpwood charcoal brings a flavour to your cooks that you just can’t achieve on a gas grill. But what about the convenience? The Big Green Egg will get to temperature as quickly as your gas grill, and it’s actually even easier to reach your desired temperature. Once you’ve eaten from an Egg, you’ll never look back.

Big Green Egg vs. Gas BBQ

Almost a decade ago we put together a comparison of the Big Green Egg vs. a Gas BBQ.

I was lucky enough to own a Weber Summit S-650. The equivalent of this is now the S-670, a £4,000 gas grill (when it's on sale). I bought a large Big Green Egg though, and then compared them.

The S-650 was eventually given away, I never used it. It's still going strong though at my brother-in-laws.
