Potato and Chorizo Quesadillas
Chorizo and potato quesadillas, cheesy topped potato filling sandwiched between two tortillas. A griddled snack with mexican inspired flavours. Quesadillas traditionally use one tortilla folded in half and cheese is the main ingredient.
Quesadillas are one of Mrs Meat Smoke Fire’s favourite dishes and she really doesn’t mind what they’re filled with. She does still like the garnishes of soured cream, salsa, guacomole and pickled red onions.

Ingredients
- 1 tbsp oil
- 2 medium potatoes, diced into cubes
- ½ onion, finely chopped
- Salt and pepper to taste
- 1 pack of chorizo sausage
- Flour tortillas
- Grated mozzarella cheese
To serve
- Homemade guacamole
- Homemade salsa
- Soured cream
- Fresh coriander leaf, chopped

Method
- Set up your Egg for a direct cook at 200°c with the stainless grid.
- In a pan, fry the cubed potatoes and onions with a pinch of salt and pepper. Cook until they’re golden and crispy.
- Add the chorizo to the pan with the potato mix and cook until the chorizo, potatoes and onions are golden and cooked through. Remove the chorizo mix from the pan.
- Place the flour tortilla in the pan to mop up the potato filling juices.
- Add a sprinkle of grated mozzarella to the tortilla.
- Spoon some of the the potato and chorizo mix on top, followed by some more cheese.
- Place the second tortilla on top, press gently, and cook until bottom tortilla is golden. Flip and repeat so both tortillas are golden and crispy.
- Serve with some chopped coriander and drizzle with salsa and guacamole.
