Grilled Watermelon Salad with Avocado, Red Onion, Feta & Mint

Fruit or salad is rarely a dish you associate with cooking on a barbecue. This dish uses one of our niece and nephew's favourite fruits, watermelon and it pairs so well with the other ingredients: avocado, red onion, feta and mint.

When we made this dish in the Live Cook, we grilled the avocado. However, if like Mrs Meat Smoke Fire, you're not a fan of grilled avocado, you could just chop it up and add to the salad.

Ingredients

  • ½ watermelon
  • 2 small red onions
  • 1 avocado, stoned
  • 1 block of feta cheese
  • ½ to 1 red chilli, deseeded and finely chopped, optional
  • Drizzle of honey (approx 2 tbsp)
  • 1 heaped tsp Dijon Mustard
  • Juice of 2 limes
  • sprig of mint, roughly chopped
  • oil for drizzling
  • salt and black pepper, to season

Method

  1. Setup your EGG for a direct cook at 220°C with the half moon cast iron searing grid and half moon cast iron plancha.
  2. Take your watermelon, and slice into wedges. Start by cutting in two and keep slicing the wedges in half until the wedges are about 2 to 3 cm wide.
  3. Peel the onions and cut into quarters.
  4. Cut the avocado in half and remove the stone. Scoop the avocado out of the skin and slice lengthways into 3 pieces
  5. Take a handful of onions, over the plancha, scrunch them so the layers separate. Repeat until all the red onions are on the plancha. Drizzle with some oil.
  6. Place the watermelon slices on the searing grid. You want to grill the watermelon until you get some nice charring and then flip each wedge to char the second side.
  7. Cook the red onions, turning occasionally, until they have some charring but they don't all have to be cooked as this will add to the texture of the final dish. It takes about 8 to 10 minutes.  Remove from the grill and set aside.
  8. After you've removed the onion, place the avocado onto the plancha and drizzle with some olive oil. Grill until avocado takes on some colour. Flip them once they've coloured to grill the second side. Remove from the grill once cooked.
  9. Once you've taken the watermelon off the grill.  Allow to cool slightly, remove the skin off the watermelon and chop the flesh into 3cm chunks. Place the watermelon into a large bowl.
  10. Chop the cooked red onion and avocado into bite size chunks and add to the watermelon in the salad bowl.
  11. Drain and crumble a pack of feta in to the salad bowl.
  12. Add some mint and chopped red chilli into the salad, if you want a bit of heat.
  13. Add the honey, dijon mustard and lime juice. Give it a good zhuzh! Taste, season with salt and pepper as necessary. Go easy on the salt as the feta add some saltiness.
