Mama's Stuffing, A Traditional Chestnut Stuffing

Mama's stuffing is a traditional chestnut stuffing with just 6 or 7 ingredients, most of which you probably already have in your larder. While it may seem basic, it packs a lovely flavour and is a family favourite, well I love it and probably a bit more than most of the rest of the family.
Mama is my mother-in-law, who has a regular seat at our bar, during our Live Cooks and this is one of her recipes. I've had it every Christmas since joining the family and have found no need whatsoever to mess with the recipe. It's a winner.
This chestnut stuffing can be served at anytime of the year but it's fantastic for Christmas. We have it whether we're having a turkey or not. I tend to prefer a forerib of beef to a turkey but I'll still have the stuffing. If anything this chestnut stuffing dish is the Christmas dish in our house.
While this cooks perfectly in the oven, it's much better in the Egg where it gets a slight smoky flavour.

Ingredients
  

  • 25 g butter
  • 1 tbsp olive oil
  • 1 onion chopped
  • 1 pack chestnuts coarsely chopped
  • ½ pack streaky bacon
  • 6 slices white bread
  • pinch cumin seeds
  • Maldon salt
  • Freshly ground black pepper

Method
 

  1. Add the olive oil and butter to a pan and melt. This can be either done on a hob or on your Big Green Egg.
  2. Slice your bacon into small pieces and add it together with the chopped onion to the melted butter and oil. Cook on the Egg for about 8-10 minutes until the onions have softened.
  3. While the onions are softening, place the slices of bread into a mixer and blitz into breadcrumbs.
  4. Now chop the chestnuts into chunks. I don't like them too fine.
  5. Once the onions have softened, take the pan from the Egg and add the chestnuts, breadcrumbs and a pinch of cumin seeds. Mix well.
  6. Transfer the mixture to a heat proof ceramic dish.
  7. Set up your Egg for an indirect cook with the ConvEGGtor feet up with the stainless grid on top. Set the Egg to 180°C.
  8. Place the dish of stuffing into the Egg and cook for about 30 minutes.
