Jalapeño Popper Stuffed Dates

We love ABT’s or Atomic Buffalo Turds. They’re a smoked, bacon wrapped, cream cheese stuffed, jalapeño pepper and they are divine!

This recipe is a twist on the traditional version, chewy dates stuffed with a cream cheese and Hot & Sweet Jalapeño Relish mix and wrapped in bacon. We love the Jalapeño relish by Vadasz, which is available from the supermarkets and found next to the kimchi in the refrigerated section.

A great alternative snack combining sweet, spicy and savoury!

Ingredients

  • 20 dates, pitted (we like medjool)
  • 1 dsp Philadelphia cheese
  • Hot & Sweet Jalapeño Relish
  • 10 rashers of steaky bacon – get dry cured from your butcher, it’s worth it
  • A little rub – optional

Method

  1. Take your jalapeños,  cut off the stalk end, cut in half. Remove the seeds and slice finely.
  2. In a bowl, combine the cream cheese and chopped jalapeños. Give is a good zhuzh!
  3. Prepare your dates, slice them in half lengthwise, remove the stone and the cap from the end of the date.
  4. Stuff each date with about 1 tsp of the cream cheese filling (or until the date is full).
  5. Now wrap your date in a slice of streaky bacon (don’t even think about using back bacon here).
  6. Use a couple of cocktail sticks to hold the bacon in place by pushing it through the date (watch your fingers).
  7. Optional – dust your wrapped dates in a rub.
  8. Setup your EGG for a low and slow indirect cook by setting it to 180°C with the ConvEGGtor feet up with the stainless grid on top.
  9. Place your dates directly on the stainless grid.
  10. If you want to smoke them, add a small handful of wood chips to the coals (the part that is alight).
  11. Cook your dates for about 15 to 25 minutes until the bacon is cooked to your liking.
  12. Serve as an appetiser when they have cooled a little.
