Stuffed Flatbreads

Euros 2024 is underway so we were looking for some snacks or dishes that are easy to cook or can be made at half time.

Whilst we’ve made several dishes using flatbreads, this is the first time we’ve stuffed a flatbread and gently fried it.  For our first attempt, we kept it very simple and stuffed the flatbread with sundried tomatoes and mozzarella with some chilli oil.  Deciding it could take more flavour in the next batch, we added a slice of chorizo in one and salami in another.  This really hit the spot.  The flatbreads are soft cushions filled with a base of tomato and cheese, with a crispiness on the outside.  An inside out pizza?  You could add nduja, swap out tomatoes for pesto, add a rub or flavoured oil to suit your own palette.

Ingredients

  • Flatbreads makes 8 (we used our super soft flatbreads recipe)
  • 1/4 tsp chilli oil, optional
  • 100g sun dried tomatoes, finely chopped
  • 8 slices chorizo or salami, optional
  • 215g grated mozzarella
  • 2 tbsp oil

    Method

    1. Make a batch of flatbreads.  Set aside until ready to stuff or cook.
    2. Setup your Egg for a direct cook at 180°C.
    3. Preheat your pan.
    4. Divide the flabread into 8 portions.  Flour your surface and rolling pin.  Take one portion of dough and roll out into thin round shape, about 12cm in diameter.
    5. In the centre of the dough, add a little chilli oil on the base, followed by 2 tsp sun dried tomato, a slice of meat, optional, and finish with 2 tbsp grated mozzarella.
    6. Bring the edges to the centre and squeeze to form a sealed ball.
    7. Flip over and gently flatten by hand into a round, which is about 2 cm deep.
    8. Brush one side of flatbread with oil, place in pan, oiled side down and then brush the top of the flatbread with oil.  Add a second flatbread to the pan.  Cook for about 3 to 4 minutes until golden brown and then flip. Repeat until all flatbreads are cooked.
    9. You could cover the cooked flatbreads with foil or place in the oven to keep warm whilst you finish cooking the remainder of the flatbreads.  These are definitely best eaten warm whilst the cheese is gooey.
    10. We cooked two at a time in the pan. You could probably squeeze in more.  You could prep the stuffed flatbreads ahead of the game and cook them during half time.
