Lamb Smash Burgers

Smash burgers are our favourite way of making a burger and are by far the easiest. Now use the same technique but with a lamb burger. Add a little tzatziki and some grilled halloumi, and you have a stunning Greek burger.

Ingredients
  

For the burger
  • 500 g lamb mince
  • 1/2 tsp Maldon salt
  • Iceberg or gem lettuce
  • 4 bread rolls
For the Tzatziki
  • 1/2 cucumber seeds removed, diced
  • 4 tbsp greek yoghurt
  • 1 clove of garlic crushed
  • Juice of 1 lemon
  • Handful of chopped mint
  • 1/2 tsp Maldon salt
For the grilled halloumi
  • 1 pack halloumi
  • A pan of boiled water
  • 1 tbsp olive oil

Method
 

To make the Tzatziki
  1. Take half a cucumber and cut it lengthways. Use a teaspoon to scrape out the seeds from the middle. Cut the cucumber into small chunks.
  2. Add the crushed garlic, lemon juice, greek yoghurt and mint to the cucumber and mix.
  3. Season to taste.
To make the smash burgers
  1. Setup your Egg for a direct cook at 250°C and then add a cast iron skillet to heat up.
  2. Split your mince into 4 equal portions and ball each in your hand.
  3. Drop them in the skillet and either use a burger press or some greaseproof paper and a spatula to squash them to just under 1cm thick.
  4. There should be smoke. Cook for about 1.5 minutes and then flip over. You're looking for a nice crust.
  5. Cook for a further 1.5 minutes.
  6. Remove when both sides are crispy.
For the halloumi
  1. Slice your halloumi into 1cm thick pieces.
  2. Place into a pan of water that's just been boiled but taken off the heat, and leave for 2 minutes. this will soften the cheese slightly.
  3. Drain the cheese and add it to your skillet.
  4. Cook for 1 minute and then turn when it is golden. Cook for a further minute.
Assemble your burger
  1. Take a cut roll and add a good dollop of tzatziki to the bottom half.
  2. Add some sliced lettuce.
  3. Place your burger on top.
  4. Add another dollop of tzatziki.
  5. Add your grilled halloumi.
  6. Top with the other half of your bun.
