Sweet Crispy Kale
Kale isn’t that exciting in my book but cooked like this I actually like it. It’s probably because it reminds me of crispy seaweed that you get in a Chinese.
You’ll need a wok or a plancha on your BBQ to be able to cook this, I have a large cast iron wok with a flat bottom I was given. It’s a great bit of kit. I have made this though on one of the flat cast iron planchas Big Green Egg sell.

Ingredients
- 400g Kale
- 2 tbsp light olive oil
- 1 tbsp sugar
Method
- Setup your Egg for a direct cook with the stainless steel grid above the coals. Get it to 220°C.
- Add your kale and oil to the pan and fry for around 5 minutes stirring every minute.
- Add your sugar and cook for a further 2 mins stirring every 30 seconds.
- You kale should have wilted and started to catch on the edges.
Notes
If you like it really crispy then cook it for longer.
If you’re not a fan of the sweetness then you could fry it with some garlic, chilli and ginger as well as the sugar and the juice of a lime to give it an asian twist.
