Pasta Fries

Pasta Fries or Pasta Chips.   Thanks to the air fryer and TikTok trend, this simple cooked pasta recipe has taken the internet by storm. It’s cooked pasta tossed in olive oil, seasoned with a rub or spices and baked.  Although it passed us by at Meat Smoke Fire until now.

Get ready for a moreish snack, a unique appetizer or a tasty side dish, our Pasta Fries are a must-try. With a crispy texture and a delicious flavor, they are guaranteed to be a hit.

We served them with a vegetarian chilli but you could serve with salsa, guacamole or simply solo with a drink.

You can use any pasta, ideally one that is large enough so you can pick up with your fingers and dip, popular choices are farfalle, rigatoni, penne or fusilli.

Ingredients

  • 250g pasta
  • salt
  • 4 to 5 tbsp olive oil
  • 1 tbsp rub (we used Al Pastor)
  • 45g (1/2 cup) parmesan cheese (optional)

    Method

    1. Setup your Egg for an indirect cook at 200°C with your stainless steel grid.
    2. Cook the pasta in the usual way ie in a large pan of boiling water with salt.
    3. Cook for about 8 minutes until almost al dente.  You don’t want to overcook it as it’s going to be cooked again in the Big Green Egg.
    4. Drain the pasta.  Returnto the pan and coat with plenty of olive oil to stop it from sticking together and so the spices stick to the pasta shapes.
    5. Add your desired flavouring to the cooked pasta.  We used Al Pastor rub but you can one of your favourites, an alternative is italian seasoning and garlic powder.  We didn’t add any cheese but if you want to use it, you should add the grated parmesan at this stage.
    6. Spread the pasta out onto a baking tin or tray.  The tray needs to be big enough so that there is a single layer of pasta so that each piece roasts.  Otherwise cook the pasta in batches.
    7. Place the tray in the Egg and bake for about 20 to 25 minutes.  We gave it a zhush half way through so that the pasta pieces were cooking on both sides.
    8. You’re looking for it to be crispy and gnarly.
    9. Serve as a snack with drinks, use as an alternative to tortilla chips to dip into salsa or serve with leftover smoked or OTT chilli.
