Pan fried whitebait
Whitebait is super tasty and really, really easy to cook. Andrea, who does most of our filming, has them as one of her all-time favourite dishes.
You can just douse them in plain flour, but for this recipe, we have added a little spicy paprika and some garlic powder.

Ingredients
- 500-800g Whitebait
- 200g plain flour
- 1 tsp garlic powder
- 1 tsp spicy smoked paprika
- 100ml rapeseed oil
- 1 lemon, cut into wedges
- 1 tsp Maldon salt
Method
- Set up your Big Green Egg for a direct cook with a cast iron skillet on the stainless steel grid at 220°C.
- Preheat your skillet and add the oil to warm.
- Pat your whitebait dry.
- In a bowl mix the flour, garlic powder and paprika.
- In batches, toss your whitebait in the flour mix. Shake them so they have just a light coating of the flour.
- Fry the whitebait in the skillet for about 4-5 minutes, turning occasionally. They should be golden brown when cooked.
- Serve with some Maldon salt sprinkled over them and with a squeeze of lemon.
