Limoncello Margarita

The Christmas and New Year is filled with food and drink.  The Margarita cocktail is a staple to be found on any cocktail menu.  This recipe uses lime rather than lemon, which is traditionally used and is enhanced with some ginger.  It makes a sweet sour treat with a gentle heat from the ginger.

We decided that for the last 2023 live cook, whilst there would be food, we would also provide some drink inspiration.

Whilst you don’t have to fire up your Big Green Egg, if you’re already using it for a cook, why not see how you can zhuzh up your drinks too.

Ingredients

  • 35ml tequila
  • 25ml limoncello
  • 25ml lemon juice
  • 25ml sugar syrup
  • slice of lemon peel
  • slice of lemon
  • few slices of ginger
  • 1 tsp sugar
  • ice

Method

  1. Set up your Big Green Egg with your cast iron grid for a direct cook at 250°C.
  2. Once the griddle is hot, add some slices of ginger and lemon and  the lemon peel.
  3. Sprinkle the ginger and lemon slices with some sugar, which help to caramelise them.
  4. After about 2 minutes, turn and sear the other side.  You’re looking to burn the peel edges and get some caramelisation on the ginger and lemon slices.
  5. We suggest cutting the ginger into small batons.
  6. Add the tequila, limoncello, lemon juice and sugar syrup to a glass and give it a zhush!
  7. Add the peel, lemon slice,  a few ginger batons and some ice.
